Ingredients for Pasta Salad with Pesto
1 pack of pasta
3 diced tomatoes
1 tie (dinner plateful) arugula
1 handful of Parmesan cheese, small and thinly sliced
3 – 4 tablespoons of pine nuts, roasted in a non-oily teflon pan
2 + 2 tablespoons of olive oil
For the pesto:
100 grams of dried tomatoes in oil
about 15 leaves of basil
1 clove of garlic
1/2 (half) red chili pepper
3 tablespoons of olive oil

Boil the pasta in water and drain (reserve 2-3 tablespoons of pasta water for pesto).
Transfer to a wide and deep tray.
To prevent the pasta from sticking, drizzle 2 tablespoons of olive oil on them and mix. Then let it cool.
Meanwhile, mix the pesto ingredients.
Add 2-3 tablespoons of pasta water and mix again.
Add pesto, 2 tablespoons of olive oil, diced tomatoes, arugula, roasted pine nuts and parmesan cheese to the cooled pasta and mix.
Flavour with salt and blackpepper.
Serve after about 30 minutes.
